Reader here, and today, I’m talking about the beauty of leftovers!
Over the Easter long weekend, I made a trip home to the farm to hang out with my family, and as always, on special occasions, my Mom always does up a big meal.
Because I had to drive back on Sunday, we had our big Easter meal on Saturday night, with turkey, stuffing and all the good stuff that goes along with it.
But then, on Sunday, before I left, for lunch, Mom did up a big-ass pork shoulder ham (there’s no better ham than ham straight off the bone), and another big meal. I felt more like taking a nap than driving four and a half hours after lunch!
My sister-in-law also made some fantastic chocolate cupcakes and an unreal key lime pie to boot!
Anyhoo, I ended up coming back to Yorkton with a big care package. And I do mean big – my Dad loaded me up with turkey and ham.
And I brought back buns and a margarine container full of my Mom’s stuffing it’s my favourite. Not too moist, not too dry, just right!
Well, lunch is taken care of for a few days!
There’s something simple and perfect about leftovers.
They take the guesswork out of what you’re going to eat for a few days. It gives you options over what you can do with them.
And, in my case, they give you the comforts of home, often when you can really use it.
